26 central coast • new south wales COASTING FEATURE INDIGO EATS, TREATS and Bar, named Best Casual Dining Venue in the 2010 Clubs NSW Awards of Excellence, is preparing to wow its regulars with a new menu. Head chef Steve Jones and his experienced team of chefs recently hosted their own 'MasterChef' to determine the look and feel of their new spring/summer menu. Steve said the exercise was aimed at "enthusing and motivating our team to create new and exciting dishes for the new menu due in September". Phone 4349 7728. two mains, and two desserts to a team of judges who would score their dishes for costing, originality and concept. Each chef was also required to cook their favourite main meal on the day of the competition which was judged for presentation and taste. The judges blind tasted each chef's entry to determine the ultimate winner. The winning dish, which was selected by experienced senior chef Warren Smith, was a rolled pork belly braised in an aromatic Asian style broth with shitake mushrooms, and gai- lan accompanied with a sweet chilli jam. Warren said of his win: "It was great to have a competition where we could all compete and present our favourite dishes to be judged." Along with Warren's winning entry another 15 dishes from the competition will also feature on the new menu. The concept has given the Indigo chefs ownership of their upcoming menu and added anticipation for the September launch. Catering manager Simon Walshaw added: "The whole MasterChef concept was a great way for our seasoned chefs to showcase their full potential in a competitive and fun environment. "It has allowed Indigo to create a completely new-look menu without removing any of our members' favourite offerings. Indigo recently had great success at the club industry awards however giving our members and guests a great experience on a daily basis remains our priority." The new menu is scheduled to be unveiled mid-September. Some of the new inclusions are salad of duck breast, Indigo crab cake, crispy skin salmon fillet, chicken and mushroom papadelle, and an aisiette of dessert for the sweet tooth in the family.
