Bring the carnival city to you in a passionfruit caipirinha. Shane Harband, of Rio's Barbecue Restaurant at Shelly Beach (phone 4332 3611), said the caipirinha was one of Brazil's signature cocktails, and a favourite at the restaurant. "It's one of the main drinks they enjoy in Brazil, and one of the reasons that it is so popular is because it can be made with so many different flavours," Shane said. "You can have a traditional caipirinha with lime, or you can make it with passionfruit, lichee, strawberry, kiwi fruit or mango." Today, Shane is opting for a taste of passionfruit. "This is a sweet and sour cocktail that is very refreshing and summery. The key ingredient is cachaca. If you can't get it, use dark rum instead." TANG: Lime wedges.
