WITH TABLES OVERLOOKING the tranquil fairways of Magenta Shores golf course, dining at Barretts is a soul soothing experience. The restaurant is part of the five-star Mirvac resort at Magenta Shores. Executive chef Tony Dexter says the fare is ``modern Australian'', with Mediterranean and French influences. Among the tasty morsels on offer are freshly shucked oysters with a caviar and champagne vinaigrette; seared pepper tuna, with an avocado and cucumber salad; and a terrine of farmed rabbit served with fig and pear chutney. Entrees start at $25, while mains are from $33. Those with a sweet tooth might be tempted to bypass dinner and head straight for the dessert tasting plate ($38). It features four small portions of selected desserts including passionfruit brulee with almond biscotti, lime and coconut delicious pudding, baked chocolate mousse cake and strawberry trifle. And what does the chef recommend? ``I'm quite partial to the Cape Grim beef sirloin,'' Mr Dexter said. ``It's grass-fed beef from north-west Tasmania which has reputedly got the cleanest air in Australia. Being grass- fed it means the cattle have not taken any antibiotics, and are fed on grass and not grain. It's more natural and it's a healthier product. And despite what some people claim, it definitely does affect the flavour.'' Mr Dexter said another popular choice is the assiette of duck featuring a duck liver parfait, cured duck breast and duck rillette served with a rocket and apple salad.While the menu sounds fancy, there's nothing pretentious about the restaurant. ``We've got a good local following and get plenty of regulars including many of the residents who live here," Mr Dexter said. But there are also a lot of people on holidays out to enjoy themselves.'' After 30 years cooking up treats around the world, Mr Dexter says he's more than happy at Barretts where he can get his hands on plenty of fresh local produce. ``I get as much fresh food as possible including local eggs, cheeses and seafood,'' he said. Barretts runs a four-course degustation menu in conjunction with Robert Oatley wines from the Hunter Valley. Cost is $85 per person and each course is matched with a glass of wine from the Robert Oatley range. The restaurant is open every day for breakfast (6.30am-10.30am) and dinner (6pm-10pm) and for lunch (12-3pm) from Friday-Sunday.
