Jamie Ryan comes to the Wyong resort from Crowne Plaza, Newcastle, where he headed Breeze's Restaurant, the winner of the Best Restaurant in a Hotel/Resort category at the 2009 Restaurant and Catering NSW Awards for Excellence in the Hunter. Jamie has also spent a total of five years working in the United Kingdom, where he Award-winning chef takes worldly approach at Karinyas This is a paid advertisement for Karinyas Restaurant and Bar was influenced by some world class chefs and restaurants. Jamie said two years spent working in celebrity seafood chef Rick Stein's kitchen at Sam's Brasserie, in London, had made an impression on him. "I've adopted a similar approach to my food," he said, "sourcing quality local producers and suppliers (primarily organic) and creating dishes that allow the natural flavours of the produce to be the highlight of the dish," he said. Jamie also favours the 'molecular gastronomy techniques' made famous by El Bulli, the world's best restaurant, in Spain. Jamie's experience in Australia also includes stints at Mercure Resort in the Hunter Valley, duck served with vanilla pumpkin puree, fondant potato, sprout leaves and jus gras. Oysters will also be a feature of the new menu. They will start at $22 and will include natural oysters with chardonnay and eschallot vinaigrette. Karinyas Restaurant and Bar offers diners fantastic views over the Kooindah Waters golf course, and is open for lunch and dinner seven days. On January 14, Jamie will officially launch Karinyas new menu, and diners can look forward to an extraordinary experience in regional French cuisine. Entrees will start at $14 and include cappuccino of mushroom with truffle crème, and tarte tatin of caramel onion featuring a fennel shallot puree and ash-rolled goat's cheese. Main meals will start at $24.
